TRADITIONAL by nature, delicious in flavour, the Vietnamese fresh spring roll competition is one event you won't want to miss at this year's Cabramatta Moon Festival.

Taking place on the Blue Star Airconditioning Stage at the festival on September 7, the event will be hosted for the first time by James Tran (pictured), the general manager of Huong Xua Vietnamese Restaurant in Cabramatta and Canley Heights.

He was approached by Fairfield Council to judge the contest, in which four or five people will compete for the top prize.

"They each have to create a serving of four fresh spring rolls by using seven ingredients," the 32-year-old said.

"Participants will have 20 minutes to make the spring rolls and will be judged on the size and weight of them, how they present them, the colour inside them and if they are intact."

The winner will receive a $200 voucher to use at one of his restaurants.

Mr Tran will also host a cooking demonstration, showing how to make his signature dish, Huong Xua spring rolls.

"It's a deep-fried spring roll containing minced pork, carrots, bean vermicelli and mushrooms," he said.

"I will be showing people how to enjoy eating it with fish sauce."

His cooking demonstration will take place on the Mekong Mounties Group Stage, John Street, from 2.50pm; his Vietnamese fresh spring roll competition will take place on the same stage at 1pm.
